Toni Rodríguez Segura (Barcelona, 1986) es cocinero y pastelero, especializado en elaboraciones totalmente veganas. Después de su experiencia en la cocina de varios restaurantes, con solo 19 años dio vida a su proyecto personal, Lujuria Vegana, un obrador de alta pastelería, que llegó a distribuir sus postres en España y Europa. Terminada esa etapa, se dedicó en profundidad a la investigación y el desarrollo de técnicas innovadoras específicas de pastelería vegana. En el 2018, junto con Sara Pennacchio, abrió su propia escuela de pastelería en Barcelona, Toni Rodríguez Academy, donde imparten cursos presenciales, además de funcionar como laboratorio de I+D+I. También ha impartido clases de pastelería vegana en más de 20 países. En 2020 lanzó su propia escuela online con cursos en inglés y castellano. Es autor de libros sobre cocina y pastelería vegana, entre los que destaca «Escuela de pastelería vegana», publicado por Larousse Editorial.
